Job Description

The role involves:

  1. Planning, scheduling, and assigning staff to relevant sections; assisting the Restaurant Manager with daily menu presentations and organizing F&B ship functions and events; greeting Guests and checking on their well-being.
  2. Managing guest reservations and seating; communicating guest allergies and needs.
  3. Maintaining professional communication with the culinary and bar teams.
  4. Conducting monthly inventories and assisting with ordering.
  5. Working within restaurant budgets; managing inventory and stock takes.
  6. Controlling Pest Management Logs per Public Health Policies.
  7. Updating the Restaurant Manager on team performance; improving service delivery based on feedback.

Additional responsibilities include:

  1. Minimizing equipment loss/damage; maintaining cleanliness and sanitation standards.
  2. Inspecting mise-en-place prior to service.
  3. Scheduling staff and monitoring attendance in accordance with MLC 2006.
  4. Leading a multicultural team, enhancing crew satisfaction, productivity, and retention.
  5. Providing high-level guest service aligned with Viking’s STAR Service Standards.
  6. Training and motivating team members to succeed, fostering ownership and responsibility.
  7. Conducting performance reviews, ensuring MLC compliance, and managing onboard training and recognition.
  8. Adhering to PPE requirements and proper lifting techniques.
  9. Upholding grooming and uniform standards.
  10. Securing company property, especially during rough weather.
  11. Working flexibly under pressure with a positive attitude.
  12. Gaining knowledge about itinerary ports, shore excursions, and onboard activities.
  13. Contributing to restaurant KPI goals; participating in safety, security, and emergency training.
