Job Description
The role involves:
- Planning, scheduling, and assigning staff to relevant sections; assisting the Restaurant Manager with daily menu presentations and organizing F&B ship functions and events; greeting Guests and checking on their well-being.
- Managing guest reservations and seating; communicating guest allergies and needs.
- Maintaining professional communication with the culinary and bar teams.
- Conducting monthly inventories and assisting with ordering.
- Working within restaurant budgets; managing inventory and stock takes.
- Controlling Pest Management Logs per Public Health Policies.
- Updating the Restaurant Manager on team performance; improving service delivery based on feedback.
Additional responsibilities include:
- Minimizing equipment loss/damage; maintaining cleanliness and sanitation standards.
- Inspecting mise-en-place prior to service.
- Scheduling staff and monitoring attendance in accordance with MLC 2006.
- Leading a multicultural team, enhancing crew satisfaction, productivity, and retention.
- Providing high-level guest service aligned with Viking’s STAR Service Standards.
- Training and motivating team members to succeed, fostering ownership and responsibility.
- Conducting performance reviews, ensuring MLC compliance, and managing onboard training and recognition.
- Adhering to PPE requirements and proper lifting techniques.
- Upholding grooming and uniform standards.
- Securing company property, especially during rough weather.
- Working flexibly under pressure with a positive attitude.
- Gaining knowledge about itinerary ports, shore excursions, and onboard activities.
- Contributing to restaurant KPI goals; participating in safety, security, and emergency training.
