Qualifications

• Experience in high-quality or multi-outlet environments (award-winning or lifestyle properties).
• Current or recent Executive Sous Chef / Chef de Cuisine leadership experience.
• Strong culinary skills across cuisines and styles.
• Fluency in English; Indonesian language skills welcomed.

Job description

Desa Potato Head is a creative village on Seminyak beach where design, culture, community and regeneration meet. Ranked among the World's 50 Best Hotels and recognised for its sustainability leadership, the property is home to multiple distinctive dining outlets and a renowned beach club.

We are looking for a hands-on Executive Chef who thrives being close to the food, the team and the daily operation. This is not a desk-bound role, you will spend most of your time in the kitchen and on the floor, leading the culinary team and continually elevating the food experience across the property.

What you’ll do

• Lead day-to-day culinary operations across multiple outlets, ensuring consistency, creativity and excellence
• Maintain and raise standards of food quality, flavour, consistency and presentation
• Work with the team on menus, recipes and new concepts that draw on Indonesian heritage and contemporary global influences
• Champion local sourcing, sustainability and regenerative practices
• Lead, coach and develop the culinary team
• Manage food quality, costs, suppliers, inventory and kitchen standards
• Uphold the highest standards of food safety, hygiene and regulatory compliance

What you bring

• Proven experience in a high-quality or multi-outlet environment, ideally award-winning, chef-driven or lifestyle properties
• Current or recent experience as Executive Sous Chef, Chef de Cuisine or similar senior kitchen leadership role
• Strong culinary skills across a range of cuisines and styles
• Demonstrated ability to lead, coach and develop diverse teams
• Solid understanding of food cost control, kitchen operations, commercial performance, and food safety & hygiene standards
• Fluency in English essential; Indonesian language skills highly regarded
