The Banquet Chef is responsible for the operations of the Banquet Kitchen and the delivery of the highest standard of food quality as per hotel standards and procedures. The role ensures that all food in the hotel, whether cooked or uncooked, is consistent in terms of quality, taste, and presentation.

The Banquet Chef ensures that the preparation of food produces superior meals within budget parameters, resulting in a profitable food operation. This role plans meals, supervises and coordinates the work of Chefs, Cooks, and other Kitchen team members. He/she is to be familiar with competitive operations regarding pricing, quality, and merchandising.

What will I be doing?

As the Banquet Chef, you will be responsible for performing the following tasks to the highest standards:

  • Plan, prepare, and implement high-quality food and beverage products as well as set-ups in the banquet venues.
  • Work seamlessly with recipes, standards, and plating guides.
  • Maintain all HACCP aspects within the hotel operation.
  • Use all equipment, tools, and machines appropriately.
  • Focus on constantly improving training manuals and SOPs.
  • Participate actively in quality initiatives such as daily chef briefings and monthly team meetings to improve culinary operations, meet targets, and ensure effective communication.
  • Work at offsite events when required.
  • Complete tasks and jobs outside kitchen areas when requested.
  • Assist with inventory taking.
  • Be knowledgeable of hotel occupancy, events, forecasts, and achievements.
  • Prepare menus as requested in a timely manner.
  • Work on new dishes for tastings and photo sessions.
  • Control stations within the kitchen.
  • Work closely with Stewarding to ensure cleanliness and minimize breakages.
  • Respond effectively to guest requests.
  • Be receptive to constructive feedback.
  • Purchase ingredients and control production.
  • Maintain a professional and positive attitude towards team members and supervisors.
  • Adhere to hotel rules and team member handbook, ensuring team compliance for smooth operation.
  • Coordinate and participate in all kitchen production activities.
  • Check ingredients for menus, maintaining standards of recipes, portion control, and costing.
  • Monitor food quality and usage for cost efficiency.
  • Follow proper work practices and maintain hygiene standards.
  • Ensure ingredients are checked and replaced appropriately to prevent contamination.
  • Report issues to the Chef and take necessary actions.
  • Follow new recipes and work methods as instructed.
  • Work with the Executive Chef on food quantity, procurement, and preparation.
  • Exercise maximum control over wastage to maximize profitability.
  • Check equipment functionality and report faults.
  • Prepare work orders for engineering maintenance.
  • Establish and update recipes and costing.
  • Attend meetings and briefings; communicate effectively with team members.
  • Assist in menu development and seasonal concepts.
  • Ensure timely and correct food preparation.
  • Oversee cleanliness, hygiene, and maintenance of the kitchen.
  • Manage team scheduling and timesheets.
  • Promote teamwork and uphold departmental standards.
  • Plan menus considering guest numbers, market conditions, and holidays.
  • Ensure all team members understand and follow hotel policies.
  • Perform any other duties as assigned.

What are we looking for?

A Hilton Banquet Chef specializing in Chinese Cuisine should embody the following qualities, skills, and values:

  • High school diploma or equivalent.
  • Minimum of 10 years of Chinese kitchen experience, with at least 5 years in a managerial role in a 5-star hotel.
  • Proficient in English, both verbal and written.
  • Valid health certificate.
  • Proficiency in an additional language is a plus.
  • Knowledgeable in HACCP standards.
  • Participation in culinary courses or seminars.
  • Experience working in international chain hotels in similar roles.
  • Technical education in hospitality or culinary arts preferred.
