Job Description
- Organize and execute F&B related ship functions and special events; conduct daily menu presentations with the Executive Chef.
- Estimate & plan consumption, ordering, and forecasts; maintain inventories at par level; conduct monthly inventories; create accurate quarterly orders to support the company's financial success.
- Manage opening & closing routines for your team; schedule hours for all outlets based on guest and operational needs; oversee maintenance in the Restaurant Department.
- Identify opportunities to improve service delivery aligning with Viking’s STAR Service Standards, incorporating team feedback.
- Greet guests, check on their well-being, and ensure excellent service at all times.
- Minimize equipment loss/damage; maintain cleanliness standards; apply safety policies; ensure equipment sanitation and proper return after use.
- Familiarize with HR Manual & Shipboard Training; understand working hours policies; manage crew contracts and work schedules; maintain accurate paperwork for payroll.
- Lead and support a multicultural team; maximize crew satisfaction, productivity, and retention; conduct daily meetings for updates and performance feedback.
- Inspect mise-en-place readiness 15 minutes prior to service.
- Provide top-tier service to guests according to Viking’s STAR Service Standards; manage service flow during embarkation, disembarkation, and activities; assign crew duties accordingly.
- Identify potential STARS; train and mentor them; foster a culture of ownership and responsibility within the team.
- Provide leadership to direct reports; conduct performance reviews; ensure compliance with Maritime Labor Convention; handle crew communication, recognition, and training.
- Wear appropriate PPE; use correct lifting techniques to prevent injuries.
- Maintain impeccable grooming standards and Viking’s image and uniform standards.
- Secure company property, especially during rough weather, to prevent loss or damage.
- Handle HR issues fairly and in line with company policies.
- Demonstrate flexibility; work at different times; maintain a positive attitude and represent Viking positively.
- Be knowledgeable about itinerary ports, shore excursions, and onboard activities.
- Contribute to achieving restaurant KPI goals; understand safety, security, and health policies; participate in relevant training exercises.
