A Chief Steward oversees and directs all aspects of stewarding operation under the general guidance and supervision of the Executive Chef within the established policies and procedures of Hilton. He/she directs the efforts and activities in the stewarding section to ensure quality standards of cleanliness, hygiene, and sanitation of all kitchen areas, equipment, and utensils are maintained at all times, leading to guest satisfaction, employee satisfaction, and profit for the hotel.

What will I be doing?

As the Chief Steward, you will be responsible for performing the following tasks to the highest standards:

  • Maintain high customer service focus with customers in mind.
  • Have a positive attitude, take responsibility and initiative to resolve issues, and communicate clearly with customers and colleagues.
  • Guide Steward Supervisors and Stewards in their jobs.
  • Control and analyze cleanliness standards for kitchen areas, banquet rooms, equipment, utensils, and related supplies, ensuring guest and team satisfaction while managing costs.
  • Implement and monitor detailed cleaning programs, keeping up to date with new supplies, equipment, trends, and systems.
  • Assist during operations and ensure proper handling and maintenance of all equipment.
  • Ensure all cleaning supplies and equipment are sufficiently stocked and maintain relevant manuals and charts.
  • Manage requisitions, inventories, and coordinate with other departments for maintenance and safety.
  • Inspect supplies and equipment received, ensuring they meet specifications.
  • Maintain sanitation standards across all kitchen and stewarding areas.
  • Oversee the setup of buffet and banquet functions, supervise cleaning schedules, and plan for equipment and manpower needs.
  • Coordinate with other departments on safety, security, and disposal procedures.
  • Seek feedback from customers and team members, assist in restaurant and bar operations during busy periods, and evaluate team performance.
  • Delegate duties, ensure resource availability, and maintain effective communication and teamwork.
  • Assist in training and developing team members, ensuring health and safety standards are met.
  • Perform other duties as assigned, with management reserving the right to modify responsibilities.

What are we looking for?

To succeed as a Chief Steward at Hilton, you should embody the following qualities:

  • High School diploma or equivalent.
  • At least 5 years of experience in a 5-star hotel, with a minimum of 1 year in an Assistant Chief Steward role at an international brand hotel.
  • Valid health certificate.
  • Ability to train, motivate, and lead a team.
  • Strong organizational skills, ability to work under pressure, and problem-solving capabilities.
  • Comfortable in hot, humid, and noisy environments.
  • Proficiency in Microsoft Word and Excel; knowledge of HACCP.
  • Good command of English, both verbal and written, preferred.
  • Experience within Hilton Group is advantageous.
