Job Description:
  1. Control and maintain a main Galley section: Oversee food production, follow recipes and dish guidelines, and assist with cleaning during food preparation if needed.
  2. Prepare daily electronic food requisitions: Verify merchandise in Galley stores.
  3. Recipe management: Review recipes daily, maintain recipe folders as requested by the Executive Chef/Outlet Chef, and ensure they are well-kept.
  4. Food sampling: Prepare samples for tasting, show plates, and recipe trials as deemed necessary by the Executive Chef, ensuring food quality and presentation.
  5. Service Line Maintenance: Manage the Service Line during meal hours, ensuring compliance with Viking STAR Service Standards.
  6. Delivery verification: Check daily deliveries from the Storeroom for accuracy and report discrepancies.
  7. Cost control: Practice economical work habits and control food production to reduce wastage.
  8. Health and safety: Ensure food prep and storage comply with Public Health Policies and Company Regulations, maintaining 'clean as you go' habits.
