Job Description:
- Liaise with the Restaurant Manager to compile & supervise beverage sales by the Restaurant Team. Monitor reports related to sales, revenue, cost, and inventory; present suggestions to the Hotel General Manager as needed.
- Maintain & control the ship’s Beverage Stock, work with the Inventory Manager for future orders, place durable orders according to the loading schedule, and maintain par levels. Oversee the opening & closing of Beverage outlets with proper staffing and mise en place. Conduct daily menu presentations with the Executive Chef and Sommelier.
- Assist the Hotel General Manager in organizing and executing Bar/Lounge functions and special events, providing support for other functions as required.
- Manage and motivate the Beverage Department, focusing on sales and promoting Viking’s Destination Beverage Package.
- Minimize equipment loss/damage, maintain cleanliness standards, and ensure equipment is sanitized and properly stored after use.
- Participate in loadings and waste management; assign crew for disembarkation, embarkation, and luggage duties.
- Understand working hours policies, crew contracts, and work schedules; maintain accurate paperwork for payroll.
- Lead a multicultural team, maximizing satisfaction, productivity, and retention. Hold daily meetings for updates and feedback to ensure department performance aligns with Viking’s STAR Service Standards.
- Inspect mise-en-place readiness 15 minutes before service in all areas.
- Provide excellent service to Guests, following STAR Service Standards and health policies. Manage service flow and follow up on guest complaints, reporting incidents accordingly.
- Provide leadership through performance reviews, discipline, onboard training, and crew recognition, ensuring compliance with Maritime Labor Convention (MLC).
- Wear appropriate PPE, use proper lifting techniques, and uphold grooming standards.
- Secure company property during rough weather to prevent loss or damage.
- Handle HR issues fairly and according to company policies.
- Demonstrate flexibility, work under pressure, and maintain a positive attitude and professional image.
- Stay knowledgeable about itinerary ports, shore excursions, and shipboard activities.
- Contribute to achieving Bar KPI goals, and participate in safety, security, and emergency training exercises.
