The Banquet Chef is responsible for managing the Banquet Kitchen operations and ensuring the highest standards of food quality, presentation, and taste in line with hotel standards. This role involves planning meals, supervising kitchen staff, and maintaining cost control and quality standards.

What will I be doing?
  • Plan, prepare, and execute high-quality food and beverage offerings for banquets.
  • Ensure all food preparation complies with recipes, standards, and plating guides.
  • Maintain HACCP standards within the hotel operations.
  • Use equipment and tools appropriately and safely.
  • Contribute to training manuals and SOPs for kitchen staff.
  • Participate in quality initiatives, team meetings, and offsite events as required.
  • Assist with inventory management and cost control.
  • Develop menus and new dishes, including food tastings and photography.
  • Coordinate with Stewarding to ensure cleanliness and low breakage.
  • Respond effectively to guest requests and feedback.
  • Adhere to hotel policies, hygiene standards, and safety regulations.
  • Supervise and train kitchen team members, ensuring certification and standards are met.
  • Monitor food quality, presentation, and waste to maximize profitability.
  • Maintain the cleanliness, hygiene, and maintenance of the kitchen environment.
  • Collaborate with the Executive Chef on menu planning and operational challenges.
  • Attend meetings and communicate effectively with team members.
  • Perform other duties as assigned by management.
What are we looking for?
  • High school diploma or equivalent.
  • Minimum 10 years of Chinese culinary experience, with at least 5 years in a managerial role in a 5-star hotel.
  • Proficient in English, both written and verbal; additional languages are a plus.
  • Valid health certificate.
  • Knowledge of HACCP standards.
  • Participation in culinary seminars or advanced training preferred.
  • Experience in international chain hotels is desirable.
  • Technical education in hospitality or culinary arts is preferred.
