Job summary

Japanese Food Store in London is seeking a Fish & Meat Specialist to join our team. You will expertly fillet, portion, and prepare fish and meat for sashimi-grade offerings and retail display.

This role requires attention to hygiene, HACCP knowledge, and ability to maintain fresh, correctly labelled displays while following safety procedures. Previous experience in a fast-paced environment is essential; knowledge of food hygiene and safety is desirable.

Qualifications

• Previous experience in a similar fast-paced environment.
• Knowledge of Food Hygiene and Health & Safety desirable.

Responsibilities

• Expertly fillet, portion, and prepare fish and meat, including sashimi-grade fish and Japanese-style cuts.
• Prepare, trim, debone, fillet, portion, and package fish, seafood, poultry, and meat.
• Ensure all preparation meets company and industry standards.
• Prepare and garnish food according to presentation standards.
• Prepare sushi-grade fish following strict food safety procedures.
• Slice and portion fish for sushi, sashimi, nigiri, and other products.
• Assist in preparing and presenting products for retail display.
• Ensure all raw-consumption fish meets safety and traceability requirements.
• Maintain attractive, well-stocked, and correctly labelled displays.
• Monitor product quality and remove items not meeting standards.
