Relais & Chateau at Thornbury Castle are seeking a Sous Chef to join our talented brigade of chefs. You will work in a unique and beautifully restored Castle and four Red Star boutique hotel, creating truly memorable and impressive 5-star dishes for our guests in our 3 Rosette restaurant.

About Us

Set on 15 acres of beautiful land, Thornbury Castle Hotel is the only Tudor Castle operating as a hotel in England. The Castle has recently undergone a multi-million pound refurbishment, restoring its regal grandeur. Located 20 minutes’ drive from Bristol, it offers 26 rooms and suites, an award-winning restaurant, bar, and two unique meeting and conference spaces. Our food style is modern British, using the best locally sourced produce from our kitchen garden and around the southwest. We operate 7 days a week, serving breakfast, afternoon tea, dinner, and Sunday lunch, as well as hosting weddings and events. Our goal is to deliver “refined and personalised hospitality,” making our hotel a place where guests can relax, enjoy, and feel like royalty in a unique setting with exceptional staff.

Job Description

  1. Full-time permanent position, 48 hours per week
  2. Salary from £40,000 per annum, depending on experience
  3. An additional share of service charge and tips paid monthly
  4. Responsible for food preparation and service
  5. Collaborate with the Executive Head Chef to create menus
  6. Lead the kitchen in the absence of the Executive Head Chef
  7. Assist in training new kitchen staff
  8. Strictly follow all food safety and health and safety procedures
  9. Demonstrate natural culinary talent with outstanding attention to detail
  10. Work calmly and proactively, using own initiative

Qualifications

  • A talented chef with a professional approach, passion, and flair for the industry and food
  • Experience in a 3 AA Rosette or 1 Michelin star environment is ideal, or at least 5 years' experience in a 2 AA Rosette setting or above
  • Maintain a calm, mature attitude with resilience under pressure
  • Dedicated team player with strong communication skills
  • Ambition to succeed at the highest levels
