Relais & Chateau at Thornbury Castle are seeking a Sous Chef to join our talented brigade of chefs. You will work in a unique and beautifully restored Castle and four Red Star boutique hotel and create truly memorable and impressive 5* dishes for our guests in our 3 Rosette restaurant.

About Us

Set on 15 acres of beautiful land, Thornbury Castle Hotel is the only Tudor Castle operating as a hotel in England. The Castle has recently undergone a multi-million pound refurbishment, bringing back the regal grandeur of its past. Located 20 minutes’ drive from Bristol, it offers 26 rooms and suites, an award-winning restaurant, bar, and two unique meeting and conference spaces. Our food style is modern British, using the best locally sourced produce from our kitchen garden and around the southwest. We operate 7 days a week, serving breakfast, afternoon tea, dinner, and Sunday lunch, as well as hosting weddings and functions. Our goal is to deliver “refined and personalised hospitality” to make our hotel a place where guests can relax, enjoy themselves, and feel like royalty in a unique environment with exceptional staff.

Job Description

  1. Full-time permanent position, 48 hours per week
  2. Salary from £40,000 per annum, depending on experience
  3. An additional share of service charge and tips paid monthly
  4. Responsible for food preparation and service
  5. Collaborate with the Executive Head Chef to create menus
  6. Lead the kitchen in the absence of the Executive Head Chef
  7. Assist in training new kitchen staff
  8. Maintain all food safety and health and safety procedures
  9. Demonstrate natural culinary talent with outstanding attention to detail
  10. Work efficiently and independently, using own initiative

Qualifications

  • A talented Chef with a professional approach, passion, and flair for food
  • Experience in a 3 AA Rosette or 1 Michelin star environment is ideal, or at least 5 years' experience in a 2 AA Rosette setting or above
  • A calm, mature attitude with resilience under pressure
  • Dedicated team player with strong communication skills
  • Aspiring to succeed at the highest levels
