Relais & Chateau at Thornbury Castle are seeking a Sous Chef to join our talented brigade of chefs. You will work in a unique and beautifully restored Castle and four Red Star boutique hotel, creating truly memorable and impressive 5-star dishes for our guests in our 3 Rosette restaurant.

About Us

Set on 15 acres of beautiful land, Thornbury Castle Hotel is the only Tudor Castle operating as a hotel in England. The Castle has recently undergone a multi-million pound refurbishment, restoring its regal grandeur. Located 20 minutes from Bristol, it offers 26 rooms and suites, an award-winning restaurant, bar, and two meeting and conference spaces. Our food style is modern British, using locally sourced produce from our kitchen garden and around the southwest. We operate 7 days a week, serving breakfast, afternoon tea, dinner, Sunday lunch, and hosting weddings and events. Our goal is to deliver “refined and personalised hospitality” to make our guests feel relaxed, special, and regal in a unique setting with exceptional staff.

Job Description
  1. Full-time permanent position, 48 hours per week
  2. Salary from £40,000 per annum, depending on experience
  3. Additional share of service charge and tips paid monthly
  4. Responsible for food preparation and service
  5. Collaborate with the Executive Head Chef on menu creation
  6. Lead the kitchen in the absence of the Executive Head Chef
  7. Assist in training new kitchen staff
  8. Maintain all food safety and health and safety procedures
  9. Demonstrate natural culinary talent with attention to detail
  10. Work calmly and independently, using initiative
Qualifications
  1. Talented Chef with professionalism, passion, and flair
  2. Experience in a 3 AA Rosette or 1 Michelin star environment is ideal, or at least 5 years' experience in a 2 AA Rosette role or higher
  3. Calm, mature, resilient under pressure
  4. Dedicated team player with strong communication skills
  5. Ambition to succeed at the highest levels
