Job Description:

As a key member of the kitchen team, the Sous Chef will ensure the food quality and consistency by following signed off specification recipes for the small private members' restaurant.

Salary: £37,000, plus generous gratuities

Key Responsibilities:
  • Taking full control of the ordering for all products, HACCP protocols, Health and Safety protocols, and general day-to-day running of the Back of House kitchen operations.
  • Running all elements of the A La Carte plated dishes for lunch and dinner.
  • Overseeing and organising stock and ingredients in both preparation and stock holding.
  • Managing food and production levels by keeping records of waste, stock holding, and raising any food cost concerns.
  • Controlling each section's food storage area and maintaining them to the required standard.
  • Supporting the production of new recipes, menus, and dishes for the Pegasus Restaurant.
Qualifications:
  • Formal culinary training
  • Experience working in a restaurant environment, cooking A La Carte dishes to order
  • Good foundation of Health and Safety, as well as Food Safety
  • Strong organisational skills
  • Self-motivated
  • Highly developed attention to detail
  • Creative, personable, and outgoing character
