Job description

The Biltmore Mayfair is looking for a Sous Chef for their all-day dining restaurant concept. The Sous Chef will be working alongside some great Chefs and an amazing team and driving the menu & business forward. We are looking for someone focused on working with the best and who wants to grow and develop their culinary knowledge cooking fresh, seasonal produce dishes.

As a Sous Chef you are responsible for supporting the Executive Chef and Head Chefs in a busy hotel kitchen delivering consistently high-quality food, meeting deadlines, adhering to HACCP regulation and mentoring Junior Sous Chefs, Chef De Parties, Demi CDPs and Commis Chefs, ensuring consistent presentation and standards.

Profile
  • A proven track record in a similar role with the ability to inspire and motivate, with experience ideally gained in a similar restaurant/kitchen or boutique hotel sector
  • Understanding of flavours balance, a passion for food and your own development is a must
  • To be highly motivated and pro-active; act with professionalism and positivity in all interactions
  • Experience and proficiency across a range of kitchen management disciplines including stock management control and menu planning; ideally gained in a high volume, fast-paced kitchen
  • Contribute to menu development and commitment to team training and development
  • The ability to develop and deliver effective training to maintain consistent service standards throughout your team

Situated on a super prime location in the heart of Mayfair on Grosvenor Square, the property offers 257 luxuriously appointed guest rooms as well as 51 highly-curated and beautifully designed suites, which will reflect the property’s origin as a sophisticated and elegant London private residence.

The Biltmore Café offers all-day British Dining with elegant and sophisticated surroundings, an all-year round alfresco terrace, an exclusive cocktail bar and a large gym tech fitness suite.
