Responsibilities
  • Lead the brigade* - Support the Executive Head Chef in managing day-to-day kitchen operations, including briefings, prep schedules, and team organisation.
  • Drive service* - Take the lead on the pass, maintain momentum, and deliver consistently outstanding dishes every time.
  • Develop the team* - Train and support junior chefs, create a culture of learning and excellence, and nurture a positive team spirit on every shift.
  • Control stock & costs* - Support purchasing, stock rotation, portion control, and waste reduction to hit budget and sustainability goals.
  • Innovate and inspire* - Contribute to menu development and daily specials that reflect our local story, seasonal ingredients, and brand standards.
  • Champion safety* - Maintain high standards of hygiene, cleanliness, allergen awareness, and food safety compliance at all times.
Qualifications
  • Proven experience as a Sous Chef or Junior Sous in a high-quality, fast-paced kitchen
  • Strong technical skills across all sections
  • Ability to lead a team with empathy, energy and clarity
  • Excellent knowledge of food hygiene, HACCP, COSHH and allergen procedures
  • Commercial awareness, understanding how to manage food costs and drive efficiency
  • Flexibility to work a rota including early mornings, evenings, weekends, and holidays
  • A passion for hospitality and a hunger to grow within a collaborative kitchen team
