Location: Aldwark Manor Estate, Aldwark, Nr. Alne, York, YO61 1UF

Hours of work: 46 hours per week

Aldwark Manor Estate is a privately owned Hotel with Golf nestled in a picturesque village between York and Harrogate. Set in 200 acres of beautiful countryside, this luxury Hotel provides a complete escape for both business and leisure guests and is a popular venue for weddings.

Over the last few years, the Hotel has undergone major renovations in the bedrooms, restaurant, residents lounge, sports bar, and all public areas. This year, we will be completing our new and opulent spa and state-of-the-art leisure areas as well as our new conference rooms and additional 24 bedrooms.

We are currently seeking a highly skilled and motivated Sous Chef to join our team at Aldwark Manor Estate. This role is responsible for all Elements Restaurant work, collaborating with other chefs to deliver Breakfast, Lunch, and Dinner in our 2 AA Rosette Restaurant.

Purpose of the role:

As a Sous Chef, you will be overall responsible for supporting the Head Chef in the day-to-day running of the Kitchen and its staff in the absence of the Senior Sous Chef and the Head Chef. You will direct kitchen activities for junior members and ensure the preparation of our delicious food, helping create memorable experiences for guests whenever they dine.

You will support the Head Chef with food preparation, menu creation, and inspire and monitor the junior team in the absence of the Senior Sous Chef and the Head Chef. The main purpose of the role is to be a supportive role model, ensuring smooth workflow and operation of the kitchen while maintaining high standards of food quality and presentation. This role also includes supporting all health and safety protocols.

Main duties include:

  • Controlling and directing the food preparation process.
  • Managing and working closely with junior chefs to develop and lead them.
  • Food ordering to minimize resource waste.
  • Menu development, requiring excellent cooking skills and a strong understanding of produce, ingredients, and costs.
  • Effective communication through departmental meetings, HOD meetings, function sheet meetings, and health and safety meetings.
  • Being flexible and adaptable, staying calm under pressure, and adjusting approaches to routine and non-routine tasks.
  • Cleaning and organizing food preparation areas.
  • Ensuring due diligence tasks are correctly carried out.
