ABOUT THE ROLE

We’re looking for a talented and driven Sous Chef to join us at The Fox at Oddington and step into the shoes of our departing team member. This is a fantastic opportunity to advance your career in a dynamic and fast-paced kitchen environment.

As a hands-on chef, you must be confident running all sections of a high-end gastro pub, consistently delivering dishes to an exceptional standard. You’ll work with the finest, largely organic ingredients many sourced directly from our neighbouring organic farm with a focus on simplicity, sustainability, and seasonality.

In the Head Chef’s absence, you will take on responsibility for overseeing health and safety, ensuring full compliance with all relevant regulations. Professionalism is key: you must be well-presented and demonstrate a strong understanding of ordering, stock control, and menu development. Experience in writing staff rotas is also essential.

SALARY: £37500 - £40000 per annum
HOURS: Full time 48hours

RESPONSIBILITIES

  • Execute all dishes according to menu specifications, ensuring consistency and quality
  • Support the Head Chef in creating innovative, seasonal specials that reflect our brand and showcase produce from the farm
  • Adhere to all kitchen audit requirements and contribute to maintaining high operational standards
  • Assist the Head Chef in ensuring a safe working environment and take responsibility for health & safety in Farm kitchens
  • Follow and enforce the cleaning rota consistently, maintaining hygiene and cleanliness at all times
  • Ensure all kitchen equipment is maintained in good working order; report any maintenance issues and follow through to resolution
  • Monitor stock levels and alert the Head Chef or Sous Chef when items are running low
  • Help manage kitchen stock efficiently to minimize waste and support accurate forecasting
  • Support the Head Chef with kitchen ordering to ensure product availability, minimal waste, and achievement of budgeted gross profit
  • Understand and support the delivery of target payroll percentage through efficient scheduling and labour control
  • Assist in training and developing junior chefs, providing coaching and mentorship where needed
  • Lead by example in professionalism, service quality, and work ethic, acting as a role model within the kitchen team

YOUR OBJECTIVES

  • Support the Head Chef in achieving internal Food Tech standards of 85% or higher
  • Contribute to maintaining a 5-star food hygiene rating in collaboration with the Head Chef and local Environmental Health Officer (EHO)
  • Assist in the successful delivery of key kitchen performance metrics, including a 72% target
  • Mentor junior chefs and complete module sign-offs to support their development
  • Complete and maintain 100% compliance with all mandatory training requirements
