Our new Heartwood Inns, The White Hart will open in Lymington in Spring 2025.

We have an amazing opportunity for an experienced Sous Chef to join our fantastic team and be part of our new opening.

Dating back to the 1700's this historic pub is located on the edge of the New Forest. Oozing character, this Grade II listed building is undergoing a multi-million-pound refurbishment to create a warm, welcoming bar of 57 covers, a beautiful dining room with 96 covers, and gorgeous outdoor space for al fresco dining with 87 covers, with an additional lawned garden.

Recently announced in the Sunday Time Top 100 Places to Work, Heartwood Collection is an award-winning collection of cosy pubs and atmospheric brasseries at the heart of their local communities serving great fresh, seasonal food. Brasserie Blanc, the French brasserie business inspired by Raymond Blanc, and Heartwood Inns is renowned for being a home-from-home.

Sous Chef - The Ideal Candidate
  • Will have a great presence and a vibrant personality
  • Able to work with and alongside the Head Chef to follow guidance and inspire, motivate and develop the kitchen team
  • Have experience in working with fresh food, running busy operations and overseeing large teams
  • Ability to maintain quality and high standards across all areas of the kitchen
  • Proven experience in delivering business growth, budgets, staff retention
