Scope

Loveday & Co. offers care services in both traditional care homes and specialised rehabilitation facilities. The Sous Chef is second-in-command to the Head Chef in the Loveday kitchen. They are responsible for food production and will assume the role of Head Chef in their absence. An important role in the kitchen, the Sous Chef ensures the smooth day-to-day running of food preparation and working practices. They are responsible for maintaining the highest standards of the members' dining experience and for the personal development of the Chef de Partie.

Main Duties and Responsibilities

  • Support the Head Chef and Front of House Team to manage and deliver all catering services throughout the home, ensuring member choice, dignity, confidentiality and safety are maintained.
  • Assist with catering management, providing the Head Chef with required reports.
  • Engage in supervision, including quarterly one-to-one meetings and annual performance reviews, to maintain professional knowledge and competency.
  • Ensure equipment checks are performed regularly, liaising with the Maintenance Coordinator, and report faults promptly.
  • Comply with audit and feedback systems to monitor the quality of menus and services.
  • Support cost-effective stock control systems to minimise waste.
  • Provide feedback on suppliers and services, address complaints promptly, and report issues to the Head Chef.
  • Develop effective working relationships with team members to ensure cost-effective, chargeable services for members, reporting any shortfalls.
  • Ensure all legislative guidelines are met.
  • Work with the Head Chef to develop and review menus regularly, considering seasonal changes and sourcing local produce where possible.
  • Prepare special diet meals and nutritional foods promptly and in accordance with mealtimes.
  • Meet with members and department heads to discuss catering needs, including cultural and religious dietary preferences.
  • Perform any other tasks reasonably assigned.
