Job description

This is an exciting time to join a passionate and forward-thinking team that aims to become the best restaurant in Bristol. While not yet award-winning, we are focused on excellence and actively pursuing accolades such as Michelin and AA Rosette recognition.

With multiple dining concepts and a focus on innovation, we are building something special. We are looking for a Sous Chef who shares our ambition and commitment to world-class standards.

Please note: You must have at least 2 years’ experience in a Michelin-starred or 3 AA Rosette restaurant. Applications without this will not be considered.

Key Responsibilities
  1. Kitchen Leadership & Management: Lead and inspire the kitchen team, ensuring efficient workflow even under high pressure.

  2. Run the pass confidently during service days exceeding 200+ covers, maintaining control, quality, and clear communication.

  3. Maintain leadership presence in the absence of the Head Chef.

Culinary Excellence
  1. Possess a solid foundation in classical culinary techniques, with knowledge of mother sauces, stocks, and emulsions.

  2. Proficient in meat and fish butchery, demonstrating skill and efficiency.

  3. Uphold high standards of food presentation, taste, and consistency.

Event & Large-Scale Catering

Experience in event management or high-volume catering, contributing to successful functions and private events.

Menu Development & Innovation

Work with the Head Chef to craft seasonal, creative menus across multiple concepts and participate in tastings and guest feedback.

Quality Control & Food Safety

Adhere to food safety standards and ensure every dish meets high standards of quality and consistency.

Adaptability & Crisis Management

Remain composed and effective during unexpected challenges or busy periods.

Training & Development

Support and mentor junior staff, fostering team development.

What We’re Looking For
  • Minimum 2 years’ experience in a 1 Michelin-starred or 3 AA Rosette environment
  • Experience managing event catering and large-scale service
  • Ability to lead during 200+ cover services
  • Strong knowledge of classical techniques, sauces, stocks, and butchery
  • Leadership skills with a collaborative mindset
  • Target-driven with a focus on culinary growth and guest satisfaction
  • Passion for food, eagerness to learn, and attention to detail
