Opening in Summer of 2025, this new restaurant will be in a prime location in Mayfair and aims to elevate the seafood offering in London. Staying true to provenance and with a keen focus on quality, it aims to deliver a memorable and sophisticated dining experience. Featuring an open kitchen and a wood-fired grill, it will offer a delectable selection of seafood and a raw bar on the ground floor in addition to the 104 cover restaurant area, a cocktail bar, and an 18 cover Private Dining Room (PDR) on the lower level.

The Position

We are looking for a high-energy sommelier with a sound understanding of the winemaking process and knowledge of various regions and grape varieties. The successful candidate will help create our wine lists and provide informed wine pairing recommendations to guests.

This is a full-time position

Candidate Requirements
  • Extensive wine knowledge with recognized certification
  • Qualified to WSET Level 2 minimum
  • Previous experience as a sommelier or wine steward
  • A warm and engaging personality with a keen eye for detail
  • An aptitude for food and flavors, with knowledge of various regions and trends
