Job Title: Maintenance Technician

Department: Maintenance

Location: Primarily London, with travel to Manchester and Oxford

Reports To: Operations Director

About Shoryu Ramen:

Shoryu Ramen launched in November 2012 and has been recommended in the Michelin Guide 2014, 2015, 2016 and 2017. Shoryu Ramen specialises in Hakata tonkotsu ramen from the Hakata district of Fukuoka city on the southern island of Kyushu, Japan. Hakata tonkotsu ramen is a style of ramen made with a thick, rich, white pork soup and thin, straight ramen noodles. Our Hakata tonkotsu ramen recipe has been specially created by our Executive Chef Kanji Furukawa who was born and raised in Hakata, to provide the UK with highly crafted, genuine tonkotsu rarely found outside Japan. Shoryu's owner Tak Tokumine is also a native of Fukuoka city and along with Kanji is dedicated to championing his hometown’s local speciality.

Job Summary:

We are seeking a skilled and reliable Maintenance Technician to ensure the smooth and safe operation of our 10 restaurants. This role is crucial in maintaining the physical condition of our establishments, addressing maintenance needs promptly and effectively, and ensuring a positive environment for both our staff and customers. The successful candidate will be responsible for a variety of maintenance tasks across our locations, with focus on our 8 London restaurants (including a grocery retail shop and food court unit in Westfield Stratford City), as well as our sites in Manchester and Oxford.

Responsibilities:

General Maintenance and Repairs: Perform routine maintenance tasks, including plumbing, electrical, carpentry, painting, and general repairs to ensure all areas are functional and aesthetically pleasing.

Equipment Maintenance: Inspect, troubleshoot, and repair kitchen equipment (e.g., ovens, grills, refrigerators), HVAC systems, and other restaurant-related machinery.

Preventative Maintenance: Implement and follow a preventative maintenance schedule to minimize breakdowns and extend the lifespan of equipment and facilities.

Emergency Repairs: Respond promptly to emergency maintenance requests, diagnose issues, and implement effective solutions to minimize disruption to restaurant operations.

Site Inspections: Conduct regular inspections of all restaurant locations to identify potential maintenance issues and address them proactively.

Vendor Management: Liaise with external contractors and suppliers for specialized repairs or maintenance work, ensuring quality and cost-effectiveness.

Health and Safety Compliance: Ensure all maintenance activities are carried out in compliance with health and safety regulations, including fire safety and food safety standards.

Inventory Management: Maintain an inventory of essential maintenance supplies and equipment, and manage procurement when necessary.

Documentation: Keep accurate records of maintenance activities, repairs, and inspections.

Travel: Be prepared to travel to all 10 restaurant locations as needed, including regular trips to Manchester and Oxford.

3rd Party Involvement:

This role will require collaboration with various external contractors and suppliers for specialized repairs and maintenance. The Maintenance Technician will be responsible for managing these relationships, ensuring quality workmanship, and cost-effective solutions.

Qualifications and Experience:

Proven experience as a Maintenance Technician, preferably within the hospitality or food service industry.

Strong knowledge of general maintenance practices, including plumbing, electrical, carpentry, and HVAC systems.

Ability to diagnose and troubleshoot mechanical and electrical issues effectively.

Familiarity with commercial kitchen equipment and maintenance procedures.

Excellent problem-solving and decision-making skills.

Ability to work independently and as part of a team.

Strong communication and interpersonal skills.

Valid driver's license and willingness to travel between locations.

Knowledge of health and safety regulations relevant to the restaurant industry.

Relevant certifications or qualifications in maintenance or a related field.

Experience managing external contractors.
