About the Role – What You’ll Do

As a Senior Sushi Chef at Amazonico, you’ll be a key part of our kitchen brigade, ensuring smooth operations and delivering dishes that impress with quality, consistency, and artistic presentation. You’ll bring leadership, precision, and a deep respect for the craft of sushi-making.

You will:

  • Prepare, cook, and present sushi dishes to Amazonico’s high standards of quality and presentation.
  • Manage mise en place efficiently to maintain an uninterrupted flow during service.
  • Uphold consistency in taste, appearance, and portioning for every dish served.
  • Train and develop Demi Chef de Parties and Commis Chefs within the sushi section.
  • Ensure rigorous hygiene, cleanliness, and adherence to Health & Safety protocols.
  • Maintain portion control and minimise waste to protect profit margins.
  • Support smooth daily operations, collaborating with the Head Sushi Chef and Executive Chef.

What We’re Looking For

  • Previous experience as a Senior Sushi Chef, or Sushi Chef de Partie in a premium or luxury kitchen.
  • Strong technical sushi skills with a keen eye for detail and precision.
  • A passion for delivering excellence in flavour, presentation, and guest experience.
  • Proven leadership skills, with experience training and managing junior chefs.
  • A calm, organised, and professional approach in a high-pressure environment.
