Mission Mars, proudly representing Rudy's Pizzeria in Wilmslow, invites applications for a Sous Pizzaiolo with senior pizzaiolo experience. You will work closely with the Head Pizzaiolo to run the kitchen, ensure top quality, and coach the team across shifts. This is a leadership role as much as a craft role.

Qualifications

• Proven kitchen leadership experience in a high-volume environment.
• Expert-level Neapolitan pizza knowledge and technique.
• Strong organisational skills with ability to manage a full service under pressure.
• A natural coach and communicator to motivate a team.
• Meticulous standards around food safety and hygiene.
• Ambition and drive to progress to Head Pizzaiolo level.

Responsibilities

• Supporting the Head Pizzaiolo in running kitchen.
• Managing station prep, workflow, and service execution across every shift.
• Leading and motivating the kitchen team.
• Maintaining Rudy's quality standards and recipe adherence.
• Overseeing food hygiene, allergen compliance, and health & safety.
• Contributing to training, coaching, and team development.
• Taking full ownership of the kitchen in the Head Pizzaiolo's absence.
• Supporting stock management, ordering, and waste reduction initiatives.
