Job summary

Italian is seeking an experienced Senior Sous Chef to join our kitchen leadership team in London. This hands-on role supports the Head Chef, driving high standards of food, organisation, and team development in a busy, quality-driven kitchen focused on Italian cuisine.

The ideal candidate will lead a motivated team, contribute to menu development, ensure HACCP compliance, and maintain tight food-cost control in a fast-paced environment.

Qualifications

• Proven experience as a Senior Sous Chef or strong Sous Chef.
• Solid background in Italian cuisine (fresh pasta, sauces, traditional & modern dishes).
• Strong leadership and communication skills.
• Calm under pressure in a fast-paced Soho environment.
• Passion for quality ingredients and consistency.
• Good understanding of food cost control and kitchen systems.

Responsibilities

• Support the Head Chef in daily kitchen operations
• Lead and motivate the kitchen team during service
• Ensure consistent quality, presentation, and portion control
• Assist with menu development, specials, and seasonal dishes
• Manage stock control, ordering, and wastage
• Maintain food safety, hygiene, and HACCP standards
• Train and develop junior chefs
• Step up to run the kitchen in the Head Chef’s absence.
