What you'll do

You will lead the breakfast kitchen team, oversee food preparation, supervise your section, and ensure dishes are delivered with precision and elegance. Your role sets the tone for the day’s dining experience and supports our high standards. Responsibilities include:

  • Leading and supervising the breakfast kitchen team, coordinating with chefs to deliver flawless service.
  • Managing daily mise-en-place and food production, preparing a range of dishes from classics to innovative specials.
  • Supporting the Junior Sous Chef or deputising in their absence.
  • Contributing to menu planning with ideas reflecting seasonality and guest feedback.
  • Ensuring portion control, managing food costs, and minimizing waste.
  • Responding to dietary needs and special requests to provide a bespoke experience.
  • Maintaining hygiene and food safety standards, ensuring HACCP protocols are followed.
  • Training and developing junior team members, sharing knowledge and pride in the craft.
What you'll bring
Essential Skills and Experience
  • Proven experience as a Chef de Partie or Senior Breakfast Chef in a luxury hotel or high-end restaurant.
  • Strong understanding of kitchen operations, hygiene standards, and food cost control.
  • Ability to manage time effectively in a fast-paced environment.
  • Experience working independently during early morning shifts and overseeing a section.
  • Fluent in English with strong communication skills.
  • Creative with flexibility to adapt to guest requests.
Preferred Skills and Experience

Experience in a five-star hotel breakfast service, involvement in menu development, allergen management, sustainability initiatives, mentoring junior chefs, and knowledge of modern plating techniques and international trends.
