Job summary

Roll Boys in London seeks a Senior Baker to run day-to-day production, maintain quality and consistency, and lead the on-floor baking team. This hands-on role reports to the Operations Director and collaborates with the GM and baking consultant to translate R&D into repeatable daily practice.

Ideal candidates have proven bakery leadership, strong dough management skills, and a commitment to food safety. Immediate start with full-time schedule and London location.

Qualifications

• Proven experience as a Baker/Pastry Chef in a high‑volume environment.
• Experience leading, training or mentoring other bakers.
• Current food hygiene certificate or willingness to obtain one immediately.

Responsibilities

• Run daily production end to end: prep, proving, baking, finishing to hit volume targets.
• Own dough consistency: manage prover conditions and batch timing.
• Lead, train and rota the team bakers; set standards on the floor.
• Own food safety and hygiene compliance in the kitchen, including records and checks.
• Troubleshoot production issues and flag fixes beyond your control.
• Collaborate with baking consultant on recipe development and process improvements.
• Manage stock and ingredient ordering for production.
• Protect the product quality bar of Roll Boys.
