Grade UE06: £34,132 to £39,355 per annum plus 15% Premium Band for flexible working

Full-time: 35 hours per week, 5 over 7 days including weekends

Open-ended (permanent)

The Opportunity

We are recruiting for a Restaurant Manager for our flagship restaurant – Canopy Kitchen & Courtyard, located at The Edinburgh Futures Institute, which opened in 2024. Based at the heart of the Meadows, in the beautifully renovated former Royal Infirmary, the operation consists of a 60 cover, contemporary Scottish Brasserie, serving breakfast, lunch and dinner alongside a more informal Grab & Go takeaway offer served during the day. Working closely with the Head Chef and with the support of the Assistant Head of Catering Operations for Retail, you will be responsible for all aspects of the day-to-day running of the operation; from delivering exceptional service and growing income to recruitment, team development, stock control, merchandising, event planning, and full P & L accountability. This is a hands-on role, where you will lead from the front, inspiring your team to deliver exceptional service and maintain high standards. To succeed in this role, you will have experience managing a similar restaurant operation. As this restaurant has recently opened, there is huge potential to make your mark and drive the business forward as a destination.
