As Restaurant Manager of The
Grill at The Dorchester, you will lead a team of dedicated professionals in
delivering an outstanding dining experience - combining warm, attentive service
with genuine hospitality and operational excellence.
We’re looking for a vibrant
go-getter: someone energetic, upbeat, and focused, who thrives on building
strong teams and memorable guest moments. This is a hands-on leadership role
where your attention to detail, organisation, and ability to inspire your team
will shape daily operations and support long-term success.
What
you’ll do
Your responsibilities will
include:
- Daily
Operations: Oversee the smooth running of The Grill, including reservations,
floor management, and coordination with the kitchen and bar teams. Create
a lively, hospitable environment through strong communication, positive
energy, and a “can-do” mindset. - Team
Leadership: Manage, train, and motivate a high-performing front-of-house
team, ensuring each member understands their role in delivering
exceptional guest experiences and refined attention to detail. Foster a
positive, collaborative, and respectful culture that brings the best out
of people. - Guest
Experience: Be a visible presence on the floor - greeting guests, handling
feedback with care, and ensuring service is both warm and precise. You’ll
be the conductor of the guest experience at The Grill: intuitive,
gracious, and always one step ahead. - Administration
& Compliance: Keep a close eye on inventory, hygiene, and safety
standards; manage rotas and shift planning; and support departmental
budgets. Business literate with a sharp focus on both people and performance. - Collaboration:
Work hand-in-hand with our Culinary Director/Head Chef and
cross-departmental partners (Events, Marketing, Finance, etc.) to ensure
consistency, creativity, and excellence in everything we do.
What
you’ll bring
Essential Skills and Experience
- Previous
experience in a restaurant leadership role - A
hands-on, proactive approach to floor management, bringing energy,
enthusiasm, and momentum to every shift - A
natural leader and role model - coaching and developing your team with
positivity, clarity, and integrity - Familiarity
with booking systems, stock management, health & safety, and
day-to-day reporting - Strong
communication skills – English is the primary language used in the
restaurant
Preferred Skills and Experience
- Formal hospitality or restaurant
service training - Understanding of wine, spirits, and
food pairings - Previous experience working in a similar
work environment
