Job description

Every day is different at The Bread Factory, but here are some of the things you will be doing:

  • Carry out routine audits of production, packaging, and storage areas to verify compliance with GMP, hygiene, allergen controls, and food safety policies.
  • Perform line checks, including product weight, temperature, coding, labelling, and packaging integrity.
  • Monitor and record CCP and CP verification checks in line with HACCP plans.
  • Report any non-conformances promptly and follow up on corrective and preventive actions (CAPA).
  • Support internal audit programmes (e.g., traceability, allergen, glass & plastics, cleaning validation, pest control).
  • Maintain accurate and up-to-date audit records, ensuring traceability of all activities.
  • Monitor and escalate trends in audit findings, assisting with root cause analysis and improvement initiatives.
  • Participate in customer, third-party, and regulatory audits, providing support and evidence as needed.
  • Provide coaching to production staff on quality and food safety standards.
  • Escalate serious breaches of policy or food safety risk to the Quality Manager immediately.

  • Strong knowledge of food safety and quality management systems (e.g., HACCP, BRCGS, retailer standards).
  • Excellent attention to detail and accuracy.
  • Strong communication skills – able to deliver feedback clearly and constructively.
  • Ability to work independently while maintaining a collaborative approach.
  • Organised, with good record-keeping and time management.
  • Able to remain calm under pressure in a fast-paced environment
  • Previous experience in food manufacturing, ideally in a bakery or similar.
  • Knowledge of food hygiene, allergen management, and good manufacturing practices.
  • HACCP Level 2 or 3 (or willing to train).
  • Level 2 or higher Food Safety qualification.
  • Internal auditor training (desirable but not essential).
