The Pastry Kitchen

The Pastry Kitchen is a small but efficient kitchen producing desserts, pastries, cakes, and sweets for the entire resort. Working with a talented team, you'll deliver handcrafted desserts across our outlets. Led by our passionate head pastry chef, the team strives for high standards and continuous skill development.

The role offers an on-target annual salary of £39,186.44, including a base of £36,341.00 and estimated gratuities of £2,845.44.

About the Role

As a Sous Chef, you'll focus on leading, training, and developing the team to deliver desserts and pastries. Responsibilities include:

  • Preparing menu items for service based on hotel occupancy
  • Cooking and delivering high-quality dishes using fresh, local ingredients
  • Ensuring a safe and compliant kitchen environment
  • Managing a kitchen section during busy services
  • Training and developing team members
  • Stock ordering, menu writing, and implementing new ideas
  • Deputising for the Head Chef

About You

The ideal candidate will have experience as a Pastry Sous Chef or higher, with excellent communication and presentation skills. You should be:

  • An inspirational leader, quick thinker, and excellent communicator
  • Passionate about fine food and seasonal ingredients
  • Detail-oriented with high standards
  • Experienced in portion control, wastage logging, and cost management
  • Capable of building strong relationships with the team and colleagues
  • Knowledgeable about COSHH and HACCP standards
