The Role

As a Pastry Sous Chef, you will:

  • Support the Head Pastry Chef in managing
    daily operations across all pastry sections.
  • Lead and develop junior pastry chefs,
    ensuring standards, consistency, and creativity.
  • Oversee prep and service for all dessert
    offerings, from afternoon tea to plated restaurant desserts and event canapés.
  • Uphold the highest levels of quality, portion
    control, and presentation.
  • Contribute to new menu development, tastings,
    and seasonal innovations.
  • Maintain stock control, ordering, and HACCP
    documentation for the pastry kitchen.

listed Edwardian manor, combines cultural elegance with modern charm. We offer
an all-day public restaurant and a private members’ club with 31 bedrooms and
suites.

About You

We are looking for individuals who are
passionate about excellence and culture.

You will have:

  • At least 3 years’ experience in a high-end
    pastry kitchen, including in a leadership role.
  • Strong creative and technical pastry skills
    across plated, petits fours, viennoiserie, and breads.
  • A calm, solution-focused attitude and the
    ability to lead under pressure.
  • Excellent understanding of allergen
    management and food safety standards.
  • Experience mentoring and motivating junior
    pastry chefs.
  • Flexibility to work varied shifts, including
    weekends and evenings.

Key Responsibilities

  • Lead prep and service in the absence of the
    Head Pastry Chef.
  • Delegate daily tasks and supervise junior
    team members.
  • Ensure all desserts meet quality and
    presentation standards.
  • Uphold full compliance with hygiene, food
    safety, and temperature logs.
  • Contribute to tastings, seasonal development,
    and chef briefings.
  • Liaise with restaurant and events teams to
    manage service timing and logistics.
