Job summary

Sodexo is seeking a Pastry Chef to lead the daily pastry and bakery production for a high-volume corporate catering operation at a busy site in London. You will create cakes, desserts and pastry products and work with a supportive pastry team to deliver consistently high standards.

You'll plan mise en place, manage production schedules and maintain food hygiene, allergen controls and HACCP compliance while adapting to seasonal menus and client requirements.

Qualifications

  • Previous experience working within a pastry kitchen or similar role.
  • Passion for pastry, cakes and desserts with strong production skills.
  • Willingness to develop skills in a high-volume production environment.
  • Good organisation, time management and attention to detail.

Responsibilities

  • Produce items from scratch, following recipes, specifications and agreed production volumes.

  • Ensure consistent quality, presentation, portion control and taste across high-volume production.
  • Work closely with the Head Chef, Pastry Chef and wider culinary team to meet daily service requirements and client expectations.
  • Maintain excellent food hygiene, allergen control and HACCP standards.

Job description

This is a fantastic opportunity for a Pastry Chef looking to develop their skills and build their experience within a high-volume pastry operation. You'll be working in a modern technology environment with two restaurants, varied food concepts and fresh food prepared onsite every day. The team produces cakes, desserts and pastry products on a large scale, including around 600 portions when required, so you'll have the opportunity to develop your confidence working with volume while being supported by an experienced pastry team. We're looking for someone with a genuine passion for pastry, a good foundation of pastry skills and a willingness to learn. Whether you've already worked in a high-volume kitchen or you're ready to develop those skills, we'd love to hear from you. Build a name with big-brand businesses and corporate clients, delivering high-quality nutritious meals for boardroom lunches, executive events, and daily workplace dining. This role calls for a chef who can blend maintaining excellent standards, while working efficiently in a fast-paced, trend-setting, client-focused environment. What you'll do:

  • Lead and support the daily pastry and bakery production for high-volume corporate catering operations.
  • Prepare a wide range of cakes, pastries, desserts, biscuits, tarts and baked goods to a consistently high standard.
  • Produce items from scratch, following recipes, specifications and agreed production volumes.
  • Plan and organise mise en place and daily production schedules to meet service deadlines.
  • Ensure consistent quality, presentation, portion control and taste across high-volume production.
  • Work closely with the Head Chef, Pastry Chef and wider culinary team to meet daily service requirements and client expectations.
  • Support production for restaurants, cafés, hospitality, meetings, events and VIP functions where required.
  • Adapt production to seasonal menus, client requirements and changing volumes.
  • Maintain excellent food hygiene, allergen control and HACCP standards, including prevention of cross-contamination.
  • Follow all company, client and site food safety and operational procedures.
  • Monitor stock levels, storage and product rotation, reporting shortages or wastage to the relevant chef.
  • Minimise food waste and control ingredient usage while maintaining quality.
  • Ensure pastry equipment, workstations and storage areas are kept clean, organised and service-ready.
  • Work efficiently under pressure during peak production and service periods.
  • Support and guide Commis Chefs and junior team members, sharing knowledge and maintaining standards.
  • Communicate effectively with the wider kitchen team to ensure smooth handovers and timely service.
  • Respond positively to feedback, changing priorities and operational requirements.
  • Contribute ideas to new products, seasonal menus and improvements in production processes.
  • Maintain a professional approach when working within a client-facing corporate hospitality environment.
  • Take responsibility for maintaining high standards of presentation and service associated with a premium corporate site.
Requirements
  • Previous experience working within a pastry kitchen or similar role
  • A genuine passion for pastry, cakes and desserts
  • A good understanding of pastry techniques and production
  • Experience producing a variety of cakes, desserts and pastry products
  • A willingness to develop your skills within a high-volume production environment
  • Strong attention to detail and pride in presentation
  • Understanding of food safety, hygiene and allergen requirements
  • Ability to follow recipes, specifications and production requirements accurately
  • Good organisation and time management skills
  • Strong communication and teamwork skills

  • Experience producing high volumes of cakes, desserts or pastry products
  • Experience with vegan and gluten-free pastry production
  • Experience within a premium corporate, hotel or hospitality environment
  • Professional cookery or patisserie qualification
  • Experience supporting hospitality events or large-scale functions
