Job description
Overview

As Lounge Manager you will be responsible for the smooth operational running of The Lounge in order to deliver an excellent and memorable experience for our guests. You will be responsible for all aspects of The Lounge operation. You will be accountable for managing the budget, forecasting, P&L, as well as the coaching and development of your team.

Responsibilities
  • Fully responsible for the strategic and operational management of The Lounge as an independent revenue centre.
  • Lead afternoon and evening service periods with a strong, visible presence on the floor, ensuring all luxury service standards are upheld.
  • Analyse restaurant sales levels and profitability, creating and implementing strategic plans to achieve sales and revenue goals.
  • Own the full P&L responsibility for the department: prepare accurate forecasts, manage budgets, and optimise labour and cost of sales.
  • Develop and execute innovative wine, sake, and cocktail programs, collaborating with suppliers to curate unique beverage offerings.
  • Design and execute creative lounge promotions, collaborations, and seasonal activations to drive traffic, revenue, and brand engagement.
  • Inspire, mentor, and lead the team to focus on revenue growth and upselling opportunities that enhance guest dining and bar experiences.
  • Partner with F&B Marketing to promote The Lounge, build the customer database, and position the space as a key destination.
  • Be forward-thinking and innovative in operations, best practices, and service delivery.
