Job summary

Signature Group seeks a proven Head Chef for Cold Town House, Edinburgh, a high- volume, multi-floor venue. You will own the kitchen, lead from the front, and ensure pace, consistency and strong team performance across the site.

Salary £45,000-£50,000 + Tronc (DOE). This role demands hands-on leadership, operational sharpness, and the ability to manage complex kitchen operations across multiple service points.

Qualifications

• Head Chef experience in high-volume venues such as pubs, bars, branded restaurants or similar.
• Lead teams of 10–15+ BOH staff.
• Experience managing complex or multi-area kitchen operations.
• Demonstrate strong organisation, structure, and planning skills.
• Comfortable running fast-paced, high-volume services consistently.
• Experience in multi-floor venues or split kitchen setups is a plus.
• Hands-on leaders who balance standards, speed and team engagement.
• Strong grasp of financial controls and kitchen KPIs.

Responsibilities

• Lead, organise and develop a 15 strong kitchen team across all floors.
• Full accountability for daily kitchen operations across all floors.
• Ensure consistent food quality and efficient service delivery at volume.
• Coordinate between main kitchen and pizza operation.
• Manage prep, service flow, and staffing for smooth execution.
• Drive performance across labour, GP margins, waste control and stock management.
• Maintain high standards in food safety, compliance and kitchen systems.
• Take ownership of recruitment, training and ongoing team development.
• Work with senior management to maintain standards and deliver business targets.
