Job summary

Overview

Exceptional opportunity to join the Pastry Kitchen Team at The Lanesborough, an award‑winning luxury hotel in London.

Candidate Profile

As a Pastry Junior Sous Chef you will increase revenues by reducing pastry expenses while maintaining productivity standards and guest satisfaction. You will liaise with food suppliers to manage food consumption, support the Sous Chef and Head Chef, experiment with flavours and textures, promote teamwork across departments, and lead colleagues to reach their full potential through training, follow‑up and example. This is a 24‑hour kitchen operation.

Key Responsibilities
  • Oversee pastry production and quality control.
  • Identify and implement cost‑saving measures for pastry supplies.
  • Maintain strict productivity standards without compromising service quality.
  • Coordinate with food stores to report and resolve discrepancies in food inventories.
  • Support the Sous Chef and Head Chef with daily kitchen operations.
  • Create innovative pastry concepts and experiment with new flavours.
  • Encourage teamwork between all kitchen departments and hotel areas.
  • Lead and inspire colleagues, providing thorough training and continuous improvement.
Key Requirements
  • Experience as a Pastry Junior Sous Chef or Senior Chef de Partie in a fine dining or Michelin‑starred restaurant (preferred but not essential).
  • Passion for baking, chocolate and/or patisserie.
  • Proven track record of running a service or section.
  • Food Hygiene Level 3 preferred; certification can be obtained with the company.
  • Excellent command of the English language.
  • Ability to engage in manual handling and lift heavy items occasionally.
