Job description

ABOUT THE ROLE

We are looking for a Junior Sous Chef to join our growing team at the Cotswolds' favourite pub. You will work alongside Head Chef Taylor Jones and Sous Chef Chloe Dicken to deliver exciting, freshly prepared meals with produce largely sourced from our organic farms at Daylesford and Wootton.

SALARY: £36,000 + Tronc

HOURS: Full time, 48 hours per week

RESPONSIBILITIES

  • Reports to: Head Chef
  • Food: Execute all dishes as per menu specifications. Support the Sous Chef in delivering creative, seasonal, on-brand specials, highlighting produce from the farm.
  • Service: Treat the produce with respect.
  • Operations: Ensure kitchen audit requirements are met. Support the Sous Chef and Head Chef in maintaining a safe workplace and take H&S responsibility for farm kitchens. Follow and adhere to the cleaning rota. Ensure kitchen equipment is well maintained, operational, and maintenance issues are reported and resolved.
  • Numbers: Be aware of stock levels at all times and highlight low stock to the Head Chef or Sous Chef. Assist in managing kitchen stock, ordering, and maintaining full availability with minimal waste. Understand the importance of delivery of payroll percentage.
  • People: Assist in coaching junior chefs through training and development. Act as a role model in work ethic, service quality, and professional skills.

  • Assist the Head/Sous Chef in achieving a Food Tech internal standard of +85%
  • Contribute to achieving 5-star scores on the doors-Local EHO
  • Help deliver a 72% score
  • Mentor junior chefs and sign off modules
  • Complete and stay up to date with 100% mandatory training
