ABOUT THE ROLE

The Three Horseshoes is renowned for its warm welcome and generous community spirit. Serving local beers and ales, an eclectic wine list and comforting pub food made from seasonal ingredients, the pub has six rooms and a large garden with views across the rolling Cotswold hills.

We are seeking a passionate and driven Junior Sous Chef to join our growing team at one of our beautiful pubs in the Cotswolds. Working closely with and reporting to Head Chef Roger, you will help deliver exciting, freshly prepared dishes using high-quality ingredients—many of which are sourced directly from our organic farms at Daylesford and Wootton.

SALARY: £35000 + Tronc
HOURS: 48hours / Full time with weekend work

RESPONSIBILITIES

FOOD

• To execute all dishes as per menu specs
• To support the Sous Chef to deliver creative, seasonal, on brand specials, highlighting produce from the farm

SERVICE

• To treat the produce with respect

OPERATIONS

• To ensure kitchen audit requirements are adhered to
• To support the Sous Chef and Head Chef to maintain a safe workplace and take H&S responsibility for Farm kitchens
• To ensure the cleaning rota is followed and adhered to at all times
• To ensure kitchen equipment is well maintained, fully operational and maintenance issues are reported and closed

NUMBERS

• To be fully aware of stock holding at all times & highlight to head chef/ sous chef low stock levels
• To assist the Sous Chef and Head Chef in managing the kitchen stock
• To assist the Sous Chef/Head Chef in managing the kitchen ordering to ensure full availability, minimum waste & delivery of budgeted G.P.
• To understand the importance in a delivery of payroll percentage

PEOPLE

• To assist in coaching junior chefs through training and development
• To act as a role model to the kitchen team in terms of work ethic, service quality, professional skills etc

• To aid Head/Sous chef in Food Tech internal standards to achieve a +85%
• To aid Head/Sous Chef in a 5-star scores on the doors-Local EHO
• To aid Head/Sous Chef in delivery of 72%
• Mentoring junior chefs & module sign offs
• Complete and remain up to date with 100% mandatory training
