Head Prep Chef – Award-Winning London Restaurant Group
Borough Market | £45,000–£50,000 | ASAP Start

We’re proud to be partnering with one of London’s most exciting and celebrated new restaurant groups to find a hands-on, experienced Head Prep Chef / Kitchen Manager to lead their central prep and bakery kitchen in the heart of Borough Market.

This group has had a phenomenal first year, earning major industry recognition including a Michelin star and a Bib Gourmand, with a concept inspired by the vibrant markets and flavours of the Mediterranean and Levant – powered by seasonal British produce and a serious commitment to quality.

The Role

You’ll be leading a core team of chefs and overseeing essential prep operations for two busy restaurants that serve over 6,000 guests per week. This is a role for someone calm, focused and highly organised – someone who knows how to run a tight ship while maintaining the highest standards of food quality, hygiene, and team morale.

Shift Pattern
  • Early mornings (start around 4am) – finish by early afternoon
  • Full-time, permanent role
  • ASAP start available
Responsibilities
  • Lead and support a prep kitchen team of around 4 chefs per shift
  • Ensure all prep is completed to par levels, to spec, and on time
  • Oversee night bakery and night butchery operations
  • Manage deliveries and stock rotation
  • Input invoices and assist with stock control systems
  • Carry out food safety checks and ensure due diligence is followed
  • Supervise and rota the KP and prep kitchen teams
  • Maintain a calm, productive, and quality-focused kitchen environment
What We’re Looking For
  • Experience as a Sous Chef or above in a high-quality, high-volume environment
  • Strong leadership and kitchen management skills
  • Confidence working with premium, fresh produce
  • Meticulous attention to detail and food hygiene standards
  • Comfortable starting early and leading a key part of back-of-house operations
  • A natural team player who takes pride in getting things done to a high standard
