The St Pancras Renaissance Hotel is a distinctly iconic architectural masterpiece that celebrates both heritage and innovation. Located in one of London's landmark buildings, it offers a blend of modern lifestyle and luxury experiences, creating new stories built upon those from the past.

We are seeking a passionate Head Chef who values food and people, capable of working effectively within a dynamic and fast-paced restaurant and bar environment.

Position Summary: Reporting to the Executive Sous Chef, as Head Chef at St Pancras, you will manage daily kitchen operations, ensuring food quality and service excellence. Your responsibilities include overseeing production and service across bars, restaurants, event spaces, and associated areas (canteen). As a senior leader in the F&B department and the main culinary authority in the hotel, you will ensure compliance with food safety, hygiene standards, and cleanliness, while also leading menu design, development, guest interaction, goods receiving, and food cost control.

Responsibilities: Your journey with us involves:

  1. Designing menus with proper portioning, presentation, and garnishing.
  2. Managing food, chemical, and controllable ordering aligned with forecasted business levels, with flexibility as needed.
  3. Ensuring all menu items have detailed specifications, including photos and allergy information, with staff sign-off on training before menu launch.
  4. Monitoring equipment to ensure proper operation, supporting efficient food production and hygiene compliance.
  5. Collaborating proactively with the F&B Front of House team to enhance guest service and menu knowledge through taste panels.
  6. Overseeing daily kitchen and back-of-house operations to maintain excellence in food production, service, and cleanliness.

Cleanliness & Food Hygiene and Safety:

  1. Ensuring team adherence to sanitation, cleaning, and pest control procedures, reporting issues promptly.
  2. Training associates on proper cleaning of equipment and maintaining hygiene standards.
  3. Enforcing PPE usage according to company and legal requirements.
  4. Maintaining accurate documentation related to food safety, hygiene, HACCP, temperature controls, and cleaning schedules.
  5. Ensuring full compliance with local and national food safety and hygiene regulations, including EHO inspections.
  6. Training staff on food hygiene, health, safety, and allergy procedures.
  7. Implementing policies such as FIFO, dating, labeling, and Cold Chain compliance across food-related departments.

Qualifications:

  • Minimum of 1 year of experience in a similar role.
  • Exceptional interpersonal and communication skills.
  • Proven leadership skills with a history of motivating teams.
