Head Chef - Pall Mall, London

Purpose of the role:

To lead the day to day operations of the kitchen, which includes 4 restaurant and a large banqueting and events function, delivering standards as set and approved with the Executive Chef, produce 5 star standards of food and continually strive for perfection and high levels of member satisfaction.

Responsible for up to 60 chefs and 30 kitchen porters.

Responsibilities:

  • Deliver the budget requirement as set out by the Club Management Committee and board, food cost, wage costs and all another budget costs attached to the department.
  • Develop a strong team to deliver the business requirement.
  • Work with suppliers in order to improve food cost.
  • Maintain and implement standard operating procedures to ensure a consistent delivery of excellence and positive member experience.
  • Manage through the Back of House Manager/Supervisor all operational and associated production areas to the highest standards of hygiene and cleanliness in accordance with club guidelines and the legal requirement.
  • Promote the Clubs EGS strategy and actively embed into the department.
