Key responsibilities
  • Plan menus that align with client and customer expectations.
  • Ensure that budgetary targets are achieved on site by demonstrating a strong understanding of GP, GP%, selling price, cost price, margin, mark up, and calculation of menu costs through recipes.
  • Prepare and oversee all food preparation to the highest standards, minimizing wastage, and sourcing seasonal and local ingredients where possible.
  • Undertake weekly and monthly stock takes and coordinate stock ordering for the operation.
  • Understand and comply with company and statutory health, hygiene, safety standards, including COSHH and HACCP.
  • Manage, coach, and develop the kitchen team.
  • Seek customer feedback during service and use this information to develop the food and service offerings.
  • Maintain a professional and friendly image with clients and customers.
  • Work effectively with colleagues to ensure excellent customer service.
