Hotel Indigo Edinburgh - Princes Street, part of the Cairn Group, seeks a Head Chef to lead the Twenty Princes Street kitchen. You will shape modern Scottish cuisine, partner with Cairn Group’s central Food & Beverage team, and drive menu development and operational excellence.

You will own hygiene, allergens and HACCP, build a confident brigade and deliver outstanding guest experiences across breakfast, lunch, dinner, and events.

Qualifications

• Have a proven Head Chef or strong Senior Sous Chef background within a hotel or quality restaurant operation.
• Able to manage food safety, allergens and kitchen compliance.
• Strong food costing, gross profit and labour management skills.

Responsabilités

• Lead the kitchen operation across Restaurant & Bar at Twenty Princes Street.
• Develop and deliver menus reflecting the brand identity and goals.
• Own kitchen standards, food safety, allergens, HACCP and audit readiness.
• Build a structured training and development plan for every brigade member.
• Control food cost, labour, purchasing, stock and waste.
• Lead by example during busy services and major events.
