About the Role
Asthe Head Chef, you will look to oversee the
general running of the kitchen and will have an immense amount of autonomy when
it comes to menu creation, supplier choice and recruitment. To oversee the
day-to-day preparation and planning of the kitchen and team for service. You
will have a strong financial acumen and be able to develop, control and
maintain budgets and targets.
To act as a role model to all employees by showing a positive approach to team
morale through excellent support, training and communication

In This Role You’ll:
- To
ensure the highest quality of food comes out of the kitchen. - Oversee
the day-to-day Kitchen management of the restaurant - Always
ensure the highest level of personal appearance. - Develop,
co-ordinate and drive your team to promote the business, focus on the
customer, exceed customer expectations, develop excellent product
knowledge and seek and deliver sales opportunities. - Understand
the business, its environment, its potential, its performance and its
competition - Be
an expert on our menu, cooking techniques, provenance, supplier
information and ethos in every sense. - Deliver
on forecasts and budgets. - Ongoing
sourcing of ideas and methods that will contribute to the success and
reputation of the restaurants. - Fully
understands and articulate the financial targets - Offer
clear directions and briefings to the management team - To
ensure that all / any new policies and procedures are implemented in time
frames require and then are adhered to - Continue

People Management
- Attend
and contribute to Staff Members briefings and other related
activities - Select,
train, evaluate, lead, motivate and guide all employees in the division to
ensure that core standards are met and provide support for all new
recruits through on-the-job training. - Supporting recruitment, induction, training and performance appraisals of new employees
- To
build and maintain an efficient team of employees, driving the team
towards the objectives of the business. - Be a
leader, a positive force and role model to your team, uphold the company’s
values, motivate and inspire individuals throughout the business. - Encourage
teamwork; communicate effectively with subordinates, peers and superiors,
share ideas. - Maintain
& drive the highest standards of staff product knowledge, through
encouragement and detailed training plans and on-boarding. - Recruit,
schedule and create development paths for all other chefs – keeping chefs
engaged. - Work
in collaboration with GM to ensure that Kitchen & Floor performance
notes and progression processes, support and ceremonies are adhered to.
Create a culture of nurturing, monitoring & celebrating success. - Monitor
delivery of staff appraisals and conduct managers’ appraisals. - Monitor
payroll information ensuring its accuracy and weekly delivery to Fourth
Hospitality.
Finance Management
- Assume
full responsibility for the Kitchen operations. - Oversee
the creation and recording of orders in line with company policy and the
needs of the business and coach any new senior chefs to be able to do so. - Ensure
complete control of the food, costs of sale, GP and menu item costings
through weekly stock takes and analysis. - Provide
Sales and cost figures and share with the management team on a weekly
basis. - Perform
the Monday and Tuesday office duties Labour / Financial and Performance
analysis / Health & Safety / Rota & HR and report weekly in a
format set out by the Ops Manager to Directors
Health and Safety
- To
ensure all areas of the kitchen operate within legal guidelines by
ensuring the all areas and staff, operate within the appropriate
legislation and the appropriate records are maintained up-to-date,
including health & safety, hygiene, equal opportunities, HACCP and any
other legislation as appropriate. - Be
trained to at least Food Safety Level 3 - Ensure
the Company’s Health & Safety and HACCP policies are always adhered
to. - Monitor
and act in line with feedback in relation to the In-House Audits. - Ensure
that all potential and real hazards are reported immediately and
rectified.
