We have a fantastic opportunity for a Head Chef to lead the catering team at our Holybourne Hospital in Roehampton, an Adult Mental Health hospital for men and women with severe and complex mental health conditions. As Head Chef you will lead and motive a friendly and dedicated team of Chefs and Kitchen Assistants who provide nutritious and enticing meals for up to 41 adults.
Holybourne Hospital is an Adult Mental Health hospital for people of all genders with severe and complex mental health conditions based in London. We provide high quality intensive treatment in a clinically safe, caring and secure environment.
What you'll be working:
- Full time
- Monday to Sunday hours dependent on kitchen needs.
What you'll be doing:
- To prepare and cook food to meet requirements of planned menus.
- To carry out the duties of the Head Chef of the hospital and to actively lead and participate in the preparation of meals.
- To maintain health, safety and hygiene standards to comply with legal requirements and good practice.
- To ensure that all meals are prepared and ready at the correct time, and in accordance with dietary and nutritional requirements.
- To set standards of performance to the kitchen and catering team staff and ensure that these are effectively communicated, and that staff are sufficiently motivated in order to achieve them.
- To organise work rotas to suit the needs of the hospital and to supervise the practical operation of working schedules.
- To plan, review, and communicate all menus, co-operating closely with the Hospital clinical teams.
- To order daily and weekly food supplies, in accordance with requirements of planned menus and ensure goods received are in accordance with orders placed, invoices received, and the required quality.
OTHER DUTIES
- Cater for special hospital functions when required, and following discussion with and authorisation from the Hospital Director.
- Shopping and purchasing for the hospital when required and as required in line with Hospital and Group procedures.
- Kitchen and Catering Team staff training and ensuring effective team working.
- Provide Groupwide support and consultation to the Group Procurement Team in discussion with the Hospital Director and Head of Procurement in relation to menus, ordering and quality of patient food and nutrition.
RESOURCE RESPONSIBILITIES
- To maintain strict control over costs and ensure that expenses are within budgeted levels.
- To ensure that the staff resources are organised effectively.
- Motivating and supporting staff to achieve effective retention.
