Salary Up to £50,000 per annum + Tips & Performance Bonuses

Job Type Full-time, Permanent

Schedule 5 days per week, including evenings and weekends

Live-in Accommodation Live-in is £80 per week. Small double room in a shared house. Shared bathroom with one other room.

About the Role We are seeking a passionate and highly skilled Head Chef to lead the culinary team at a prestigious 2 AA Rosette Restaurant, located within a 3 Red Star Luxury Hotel in the heart of the Royal Forest of Dean. With over a decade of 2 AA Rosette excellence, the restaurant is now ambitiously striving for 3 AA Rosettes. This is a unique opportunity for a driven Head Chef to make their mark, elevating an already acclaimed dining experience to the next level.

The property, once a farm, has been transformed into a stylish boutique hotel with 20 rooms, cottages, and suites, offering a perfect blend of laid-back luxury. Accolades include The Good Hotel’s Guide Country Hotel of the Year 2019, Sawday's Hotel of the Year, and Taste of the West’s Hotel of the Year. The restaurant serves a seasonal menu based on locally sourced ingredients, regularly catering to up to 40 covers per evening.

As the Head Chef, you’ll have full creative control over the menu, working closely with local suppliers to showcase the finest seasonal ingredients. Your leadership will inspire the kitchen brigade as you drive the restaurant towards achieving 3 AA Rosettes.

Key Responsibilities

Lead and manage the kitchen team, ensuring smooth and efficient service

Oversee menu development, with a focus on seasonal and local ingredients

Maintain the highest standards of food quality, presentation, and consistency

Implement and monitor food hygiene and health & safety standards

Train and mentor junior chefs, fostering a culture of excellence and growth

Manage stock control, ordering, and supplier relationships to optimize kitchen efficiency

Work alongside the management team to ensure the restaurant’s vision is achieved

About You

Proven experience as a Head Chef or Senior Sous Chef in a Rosette-standard restaurant

Exceptional leadership and team management skills

Passion for using seasonal, locally sourced ingredients

Strong organizational abilities and high attention to detail

Ability to innovate while respecting the restaurant's established reputation

Committed to pushing for 3 AA Rosettes and elevating the dining experience
