Key Responsibilities:

  • Responsible and accountable for all aspects of successfully running the restaurant kitchen
  • Organising and overseeing all kitchen staff, delegating and sharing tasks
  • Responsible and accountable for the restaurant food hygiene rating (EHO inspection)
  • Ensure all food is prepared in line with San Carlo's food specifications
  • Adhere to all allergen policies at all times, ensuring your team is trained accordingly
  • Undertake responsibilities of any role within the kitchen when needed
  • Deliver KPIs to company targets
  • Recruitment of kitchen team, maintaining a reasonable staff level to operate effectively
  • Train and develop the kitchen team, encouraging succession planning
  • Encourage team development, driven by Sous Chefs
  • Lead talent planning across the kitchen team
  • Responsible for Health and Safety, following all company policies and regulations
  • Maintain good working relationships with front of house and back of house teams
  • Manage staff and corrective actions with support from HR
  • Manage staff rotas, holidays, and absences
  • Ensure compliance with internal policies and industry regulations
  • Collaborate with stakeholders to innovate and improve
  • Represent the company at industry events and engage with stakeholders

Required Qualifications & Experience:

  • Previous experience as a Head Chef in a similar-sized restaurant
  • High attention to detail
  • Excellent leadership, team-building, and interpersonal skills
  • Experience in inventory, supply chain management, and scheduling
  • Knowledge of industry regulations and guidelines
  • Strong analytical, problem-solving, and decision-making skills
