Qualifications

  • Proficiency in preparing sourdough breads and other baked products.
  • Knowledge of food safety, health, and hygiene regulations.

Join the MAD Team – Head Baker – £55,000 - £60,000 per annum

As the Head Baker for MAD Restaurants & L’ETO Cafés, you’ll be responsible for:

  • Preparing and producing a variety of hand-made breads, including artisan and specialty loaves for our L’ETO Cafés and MAD Restaurants group, which is opening 3 high-end restaurants this year.

Desired Skills, Experience & Responsibilities:

  • Minimum of 3 years' experience in baking, with at least 1 year as Head Baker
  • Proficiency in preparing sourdough breads and other baked products, including mixing, shaping, and baking
  • Ability to produce sourdough using manual and industrial processes
  • Knowledge of dough preparation times, procedures, and baking techniques
  • Ability to operate electric bread ovens
  • Manage high-volume production and monitor quality consistently
  • Ensure all products meet quality standards and align with daily orders
  • Knowledge of food safety, health, and hygiene regulations
  • Maintain cleanliness of work areas and equipment
  • Attention to detail, accuracy, and precision
  • Effective time management and ability to work under pressure
  • Strong team management and collaboration skills
  • Understanding of food safety regulations
