Food to Go – Chef

Location: Morrison Street, Edinburgh

Start Date: Late July 2025

Pay: £31,000 to £34,000 per year

Contract: Full Time

Overview

We’re launching an exciting new store concept at Morrison Street, a fast-paced, food-first destination where flavour, freshness and rhythm drive the day.

From breakfast to dinner, the focus is on food that’s ready to love, ready to go and ready to keep customers coming back for more. All without the late-night restaurant hours.

We’re looking for a creative, commercially minded and organised Chef to lead this from the

kitchen outwards. You’ll work side by side with your Store Manager and Cook to shape the

menus, prep flow and overall energy of the store.

About Our Food To Go Chef

You’ll lead the food side of the operation with ownership, passion and consistency.

You’ll create a strong rhythm in the kitchen, keeping preparation routines structured and well paced to match the peaks and patterns of the day.

You’ll rotate menus, keep things fresh and introduce new ideas based on seasonality, trends

and local tastes.

There’s a strong focus on food that’s made fresh in-store, ready to be enjoyed on the go and designed with presentation, pricing and quality in mind.

Looking ahead, this role will play a key part in helping us test, shape and eventually scale a

central kitchen model to support future store openings.

Your Typical Day Will Involve

  • Leading all aspects of food production, preparation and rotation for a menu designed around food for now and food to go
  • Creating prep routines and clear daily processes to ensure the kitchen runs smoothly and efficiently
  • Working with the Store Manager to align food production with store rhythm, sales targets and customer expectations
  • Designing and updating rotating menus that reflect demand patterns, dayparts and product trends
  • Collaborating with the trading team to cost recipes, set pricing and ensure each menu item delivers on quality and profitability
  • Ensuring the kitchen meets the highest food hygiene, allergen, freshness and traceability standards
  • Working with the marketing team, store team and wider business on food campaigns, product launches and seasonal promotions
  • Reviewing market trends and introducing relevant new ideas to keep the menu exciting and competitive
  • Exploring more sustainable approaches to food packaging and waste reduction
  • Supporting the development of a future central kitchen model to supply a wider store network

This is a full-time position and will include early mornings, weekends and peak seasonal periods. However, the hours are more structured than traditional restaurant roles, with a focus

on daytime prep and peak trade hours.

What do I need?

  • Experience as a Chef or Cook in a fast-paced, high-volume food environment
  • Strong understanding of food cost, margin, prep routines and hygiene compliance
  • A creative approach to food and presentation, with commercial understanding
  • Ability to lead and build structured routines in a kitchen environment
  • A collaborative mindset, with the ability to work closely with store teams, operations, marketing and trading
  • Interest in food trends, menu development and new ideas
  • A proactive, hands-on approach with pride in the quality of what you serve
