Job Description

The Food and Beverage Manager is responsible for the daily operation of the restaurant and bar, leading the F&B team to ensure customer satisfaction and managing the business to ensure profitability. The F&B Manager manages food and beverage costs, upholds menu standards, and controls inventory.

  • Carry out Duty Management shifts according to DM ROTA and business needs.
  • Attend and actively participate in weekly Head of Department meetings, respecting confidentiality.
  • Ensure the department complies with all Health & Safety requirements.
  • Manage staffing and rotas within the department.
  • Ensure all statutory training is completed in the department.
  • Handle HR aspects including recruitment.
  • Manage service of food and beverages across restaurant, bar, room service, conferencing, and outside catering.
  • Ensure cleaning and maintenance of outlets, work areas, tableware, utensils, and equipment.
  • Coordinate with Conference Office for conference preparations.
  • Prepare monthly reports on key performance indicators and actions taken.
  • Guide and manage all F&B staff, including team members and leaders.
  • Report on stock control daily, weekly, and monthly, adhering to targets and forecasts.
  • Prepare weekly and monthly forecasts for various service areas.
  • Liaise with Conference Sales Manager and Conference Coordinator.
  • Follow Emergency Communication procedures; media inquiries are responded to only by the designated spokesperson.
  • Implement the Accor Vision and actively demonstrate Accor Values.
  • Perform any other duties assigned by your manager.
  • Operate within appropriate liquor licensing guidelines and House Management Policies.

Qualifications

  • Previous experience in the same position in midscale & above hotels.
  • Strong commercial/business acumen.
  • Passion for service excellence.
